bake-o-rama
It's another baking Saturday. I started out making swedish rye bread and then - because it was taking so dang long - I decided to make ginger molasses cookies while the dough was rising. I found the recipie online and they turned out amazing....so I'm including it below. I'm on a big ginger kick lately.
Chewy Ginger Molasses Cookies
preheat oven to 375
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1 tablespoon ginger (dried - or use 2 tbl fresh ginger)
3/4 cup butter (soft)
1 cup white sugar
1/4 cup molasses
1 egg
another cup of sugar for rolling...
Mix together flour, baking soda and salt in a separate bowl (sift if possible)
Beat ginger, butter and one cup sugar until light and fluffy, add in molasses and egg.
Add in flour mix and beat together
Chill 1 hour
Make into small balls and then roll in sugar.
Bake on greased cookie sheets (or use parchment paper) for 10-12 minutes (or until edges are brown).

I am re-testing a couple of bread recipes to give you. I have one rising right now. I have abunch of recipes but have been bad about writing on them if I like them. I also never follow the recipe - so it's hard to share them - AND hard to get the same thing again. So, inspired by you, I have gone on a bread mission. I will share as I go along. Today it is sandwich bread - my 3rd this week - the other 2 kind of sucked.
I am so going to try the ginger cookie recipe. I'll make them with Jove.
